Mark Crane, Executive Chef at Sofitel Minneapolis and Colette Bar and Bistro, brings more than 14 years of accomplished cooking experience along with his passion for food to Twin Cities’ food aficionados.
Chef Crane began working in restaurants in his teens, serving first as a dishwasher. His cooking career began literally as a "baptism by fire", when three chefs walked out one night and he was pulled onto the line to cook. That is where his true passion for the culinary arts truly began.
After completing an extensive, hands-on apprenticeship, he went on to cook at several highly-acclaimed restaurants in Europe including the award-winning Fawsley Hall Hotel and the Michelin award-winning Paris Restaurant, both in England.
Serving as Executive Sous Chef at Sofitel Minneapolis since 2007, Chef Crane has finely tuned his craft, bringing his artful and modern techniques to the menu at Colette Bar and Bistro. His goal is to intertwine traditional French cuisine, with a local twist. His motto is simple—combine modern cooking techniques with the best local ingredients to create a truly “magnifique” dining experience. Bon appetit!
